DID YOU KNOW? Goat milk butter is white, not yellow.
Skim what cream you can off goat milk, or use a separator. Chill cream for 24 hours at 34 deg. F. Chill a glass or stainless steel bowl. Use an electric mixer on high until the cream whips. Keep on mixing until it becomes butter.
Wash the butter in ice water, changing the water frequently until it remains clear. Salt to taste.
No electric mixer? Simply put the cream in a cold jar and screw the lid on TIGHT. Now shake the jar until it turns to butter.
